Had the cheeseburger with cheddar cheese (a plus that cheddar is an option), small onion rings, small Coke. Burger was just ok. Not enough charbroiled flavor. Rings were fairly good--they make them there--but overly salty, and weren't as good as they should have been. They charged 25¢ for a Coke refill, which is pretty chintzy these days (most places will refill free) :(. Filth factor high--lots of decades-old dust and grime accumulation, which actually adds to the character of the place. Funky Austin original. Supposed to have good shakes. Delivery is also a good option.
So food not great, but not bad.

I love Hill-bert's burgers. They're the grilled kind with the meat on the thin side so it's not like trying to bite into a whole cow and the meat stays juicy. Also fantastic malts. It's not fancy. It's not supposed to be. Not a great place for snooty people, but the down homers will love it.

Never been to one on Lamar or up on 183 but have been to the one behind Capital plaza.
I love the burger great taste, so fo it medium or medium rare, the default is medium well to well done. Shakes are great. Fries are OK nothing special.
Haven't tried an other menu item.
Will go back about every 2 or 3 weeks weeks.
Maybe there's something wrong with me.

Hill-Bert's isn't bad per se but for my money I'll go to Dirty Martin's.
I will agree about the shakes at Hill-Bert's. I'm pretty picky about my vanilla shakes and they make them the way I like.
Food nah. Shakes yah! (wow that was bad even for me)
Terrible Chicken Sandwich

Do not order the broiled chicken sandwhich. A friend and I got it for lunch because we had a coupon. I actually had to poke the meat with my finger to verify that it was, in fact, chicken. Looked like a pink tofu patty. Sort of the color of tuna fish with little green specks on top. Thankfully the pickles and some barbeque sauce from Wendy's that I added took away some of the dryness of the chicken. I'm not sure how many times it was actually broiled, but each bite seemed to increase in size as I chewed it. Kind of like eating alligator gar mixed with hampster sawdust. NOT GOOD. Fries were hot and crispy. No salt.

I have eaten a LOT of burgers in my life, and I believe I have eaten nearly every kind of burger available in Austin. I honestly don't know how anyone could say that these burgers are lacking in flavor. I have never had a burger from here that was not absolutely steeped in charbroiled flavor and juice. And while I, like you, love Top-Notch burgers, Hill-Bert's remains my favorite with Rocket's coming up a close second.

You are correct about the filth; the place could use a deep clean. The burgers were ok, but nothing special. I was a little disappointed that refills cost extra. If I am in the area and crave a burger, I'll get it to go, but there are better places in town.

I also agree that the burger lacked flavor. I look at the pictures you took and every ingredient is there to make an awesome burger. But from the first bite you really cannot tell what you are eating. Fries were soggy and salty. The onion rings were piping hot and lacking in flavor. If I ever go there again I will put my onion rings on the burger. Maybe thats what it needs. Agree on the dirt factor.

So right on the filth factor, but man you should have had a chocolate shake. If you combine the burger (which often has a slightly soggy bun at one edge or the other from the excess grease), the rings (which I think are awesome except for the aforementioned grease), and the incredibly decadent chocolate shake, you are assured a heart attack before age 50. Personally, I hit the drive through up around once a month to keep the proper level of lubricant in my arteries. I know they will thank me for it later. I give the burgers a 1 Star but those 3 star rings and shakes bring me up to a **
